Nutritionally balanced diets in school meals are a health benefit for children.

The aim of the study was to evaluate school meals from the perspective of health benefits for children in two school canteens in the Vysočina region with a focus on nutritional balance. Four research questions were set for the work: Research question 1: Is the composition of the menus from the selected schools in line with the consumption basket and also in line with nutritional recommendations? Research Question 2: What is the awareness of school canteen staff about healthy eating? Research Question 3: Is there any difference in dietary practices between the two schools studied? Research Question 4: Are the diners in the school canteens satisfied not only with the quality but also with the niceness of the food? The thesis was divided into a theoretical part and a practical part. The theoretical part deals with the issues of school food standards, consumption basket and nutritional recommendations for childhood. In the practical part of the bachelor thesis a quantitative method of research investigation was used. The data collection was done through a questionnaire survey among boarders of both schools. Further evidence was obtained through interviews with school canteen staff and by studying all documentation in the catering facilities. School canteen menus were examined in both schools over the same time span using Nutriservis. The daily menus of each child were evaluated using Nutriservis. The data obtained were then processed and evaluated. The study population consisted of two primary schools from the Vysočina region, namely, Želiv Primary School and Lanecká Primary School in Světlá nad Sázavou. The school canteen menus were evaluated for compliance with the nutritional recommendations and the consumption basket. The research showed that both primary schools and their menus were well constructed. They are varied and nutritionally balanced. Both school canteens are also almost 100 % compliant with the consumption basket. The school canteen staff are very well informed about healthy eating. Almost all boarders are satisfied with the food served in the school canteens.
Alternative education and its view of nutrition and eating pupils nowadays.

The diploma thesis deals with alternative education and its view on the nutrition and eating habits of pupils nowadays. The work aims to find out, how alternative schools view the quality and use of the food basket within eating and nutrition of children in comparison with the traditional school. My interest was to find out the opinion of parents, how they view their children's eating in alternative schools and whether they attach great emphasis to it. The work is divided into theoretical and practical part. The theoretical part is focused on the comparison of alternative and traditional education with emphasis on the development, nutrition and eating of children. The practical part includes the results of a qualitative research survey, which was carried out with the help of analysis of available sources and subsequent study of interviews.
Offer and composition of meals for children in nursery schools.

This Bachelor's thesis focuses on nutrition of children in preschools. Here, children eat a mid-morning snack, lunch and an afternoon snack. This equals to 60% of their daily intake. Healthy development of children requires the food compliant with nutrition standards for preschool children. Hence, the Consumption Basket was introduced by the Decree No. 107/2005 Coll., on school meals. To facilitate menu creation, nutrient recommendations with frequency of meals were issued by the Ministry of Health. Submitted thesis pursues three objectives: To analyse whether the consumption basket of selected preschools meets requirements defined by the decree, to focus on the level of adherence of preschools to recommendations defined by the Ministry of Health and to reveal whether the energy value of randomly chosen four-day menus and their content of individual nutrients meet the needs of a child from a particular age group. The practical part processes four-week period's menus to observe whether the school canteen follows recommended frequency of meals. It also analyses resultant consumption baskets of selected canteens to reveal whether they follow the consumption basket content. And finally, it uses recipes and foodstuff types obtained from four randomly selected days of a particular month. Obtained data were processed in a Nutriservis program to learn whether the energy value of the menus and content of individual nutrients meet the needs of a preschool child. Results showed that two of the canteens did not meet the consumption basket criteria. They also showed the level of adherence of school canteens to the nutrient recommendations and defined room for improvement. Regarding capability of meals in preschools to meet the needs of preschool children, nutrient intake was revealed to be higher - sometimes even higher than overall daily intake. However, it is necessary to note that neither the exact amount of served food was considered nor the amount of leftovers was subtracted.

The topic of this bachelor thesis is an analysis of students´ and parents´ attitude towards school canteen eating habits and boarding at pilot program schools Skutečně zdravá škola (Fair healthy school). The aim of this thesis is to analyse the attitude of the students´a and parents´ attitude towards school boarding at these pilot schools involved in the program. Eventually, judge the success of the program and general overview of healthy food and boarding improvement. The theoretical part discusses the quality, variety of the boarding, regional sources and regional foods, consumption basket and mainly the program Skutečně zdravá škola (Fair healthy school). You can find more details about the program in this section. You can find individual students´ and parents´ attitudes in the practical part. Research has also played a major part of the thesis. The research was processed at pilot schools which were involved in the program Skutečně zdravá škola (Fair healthy school). In this part, you can find results coming from the questionnaire research and for a good over view of the situation, you can find graphs there. As a questionnaire result, you can see the fact that the parents stated that in case the child does not attend school canteen, the students´ lunch is still provided probably at a different location. With regards of school canteen quality satisfaction, most of the parents stated they were satisfied. Most of the parents also stated same way with questions regarding meal composition. Most of the parents think, that meals offered by the school canteen respect the healthy principles of nutrition. In the conclusion, you can find results of students´ and parents´ attitudes towards school canteen and school boarding, review of the program´s success and general evaluation of boarding quality improvement.
Supply of a specific assortment of goods on the Czech and German retail market

This bachelors thesis is concerned with the supply of products with reduced lactose content and products with dairy substitutes in retail chains operating on the Czech and German markets. The objective is to assess the extent of the physical accessibility of this assortment of goods and its availability at different price levels in both countries. The thesis is divided into two sections. The first section is theoretical. It defines the consumers of lactose-reduced dairy products and non-dairy products with regards to their needs and requirements as to this range of products and includes an estimate of the size of this market segment. Market segmentation theory with a focus on segmentation variables, legislative regulations concerning the specified range of products and producers and brands acting on both markets are also summarised. Section two follows the first section with an overview of the field research conducted of select shops from both markets. The products and their prices are observed and shops are evaluated based on their fulfilment of the set consumption basket, the number of products available, and labeling in shops. Price analysis is concerned with the prices of select types of products from both markets. The supply of the specific assortment of goods on both markets and the position of Czech and German consumers is assessed on this basis and lastly, market opportunities for this range of products are stated.
Problems of nutritional value of dairy products in the diet of preschool children in nursery schools

This bachelor thesis deals with the problems of the nutritional value of dairy products in the diet of preschool children in nursery schools. There were two main objectives set. The first objective was to determine the dairy products that are appropriate to this age category, and those that are less suitable or unsuitable. A second major objective was to educate on a proper nutrition in the area of dairy products the staff of those nursery schools, where the type and quantity of dairy products administered were unsatisfactory. The theoretical part describes the composition of milk and milk products, highlights especially the milk constituents over which it is necessary to think about and which should be focused on, as well as their significance for the human organism. It also describes the importance of milk and milk products for preschool children, indicates which dairy products are suitable for these children and which are on the contrary inappropriate. Last but not least, it states the recommended daily intake of these products to meet the consumption basket. In order to develop the practical part, a method of qualitative research, and a method of observation, interviewing and working with documents have been chosen. The technique has been formed by a semi-structured interview and assessment of menus in nursery schools. The semi-structured interview using a questionnaire was performed by means of a direct contact. The research file was constituted by the staff of six nursery schools in the South Region. As it results from the result of the work, the staff of nursery schools is well informed on the issue of consumption of dairy products, nevertheless it cannot meet the consumption basket in the milk area. According to the opinion of the staff, the consumption basket in the milk area is accomplished by 75% at 4 of 6 nursery schools. According to the staff of the remaining two nursery schools, the consumption basket in the area of milk can be filled in only 50%. The consumption basket in the area of dairy products can be filled, because the snacks served in the nursery schools are often completed by fruit yogurts, cottage cheese or different types of cottage cheese spreads. The consumer basket in the area of dairy products is therefore filled in 5 of 6 nursery schools to 93%. In one nursery school it fails to accomplish even such a value. The quality of dairy products served in nursery schools ranked according to the energy content, the content of carbohydrates, sugars, fats and proteins in respect to the average age of diners is moderate, the authorized staff members adhere by the selection to the price and composition of the milk product. Some of them are rather influenced by the price of the product, then the quality ceases to be of importance, others comply more with the composition of the product, and they are doing their best for the quality of the milk product, which includes even the possibility that they produce the product themselves. Advertising does not play in the selection of dairy product any role.
